In a hot skillet, sear the meat on all sides; once seared, cut it into medallions about one and a half inches thick and cook on both sides (medium doneness). Cut the potatoes into julienne strips and wash them to remove the starch; place the polenta flour on a plate and coat the potatoes to brown them. In a skillet, add oil and brown them, which takes very little time.
