Sprinkle the chicken with salt and pepper. Heat the oil in a large skillet over high heat. Add the chicken and cook until slightly browned, about 4 minutes per side. Set the chicken aside. Meanwhile, melt 2 tablespoons of butter in the same skillet over medium heat and add the onion until soft, about 2 minutes. Add the mushrooms and garlic and cook for about 12 minutes, until the mushrooms release all their liquid.
