Ingredients: 1/2 kilos chicken breast; 1 ginger; 1/2 teaspoons salt; 1/4 teaspoons pepper; 1 teaspoon sherry; 1 teaspoon sesame oil; 2 egg whites; 2 teaspoons cornstarch; 4 green onions; 4 tablespoons peanut oil; 5 peperoncinos; 3/4 cups cashews; 2 teaspoons cornstarch, for the sauce; 2 teaspoons sherry, or rice wine (for the sauce); 2 tablespoons soy sauce, (for the sauce); 1 teaspoon vinegar, (for the sauce); 1 tablespoon sugar, or 2 if necessary; 2 teaspoons sesame oil; 1 1/4 cups chicken broth

Cut the chicken into pieces a couple of centimeters in size and place them in a bowl. Grate 1/3 of the ginger over the chicken and add salt, pepper, rice wine or sherry, and sesame oil. Briefly beat the egg whites and mix them with the chicken and cornstarch. Cover the bowl with the chicken and set aside.
