Ingredients: 1 kilo chicken wings; 1/2 cups lime juice; 3 tablespoons paprika; 2 tablespoons chile powder; 2 tablespoons salsa macha; 1 pinch salt; 1 pinch pepper, with lemon; 3 tablespoons vegetable oil; 4 guajillo chiles, cleaned, deveined, and soaked in hot water; 3 morita chiles, cleaned, deveined, and soaked in hot water; 1/4 cups chipotle chile in adobo sauce; 4 cloves garlic, grilled; 2 tablespoons allspice berry; 1 tablespoon cumin; 1/2 onions, grilled; 1/4 cups lime juice; 1/2 cups butter, melted; 1 tablespoon salt; blue cheese dressing, for serving; celery, in sticks for serving; carrot, in sticks, for serving

In a bowl, mix the wings with lemon juice, paprika, chili powder, salsa macha, season with salt and lemon pepper, and marinate for 30 minutes in the refrigerator.
