Ingredients: 1 chicken; 1/4 kilos ground meat, beef; 1/4 kilos ground meat, pork; 2 carrots; 1 chayote; 4 tomatoes; 1 onion, medium; 1 plantain, or from Castilla; 2 potatoes; olives; almonds; raisins; 4 cloves garlic, large; 6 guajillo chiles; 2 cloves; 2 leaves bay; oregano; 2 balls black pepper; 1 stick cinnamon

Cook the guajillo chili with garlic, a pinch of oregano, bay leaves, and cloves. Once the chili is cooked, blend everything with the pepper and strain it, reserving it. Chop the tomato, onion, and cinnamon and fry them; peel the vegetables and finely dice them, then fry them together with the previous mixture.
