Ingredients: 1 1/2 sticks butter; 1/2 cups honey; 3 tablespoons lime zest; 3 tablespoons orange zest; 2 tablespoons fresh thyme, chopped; 4 teaspoons chipotle chile, chopped; 1 teaspoon dried thyme; pepper; 1/4 sticks butter; 2 cups onion, chopped; 2 cups carrot, chopped; 2 cups celery, chopped; 1 1/2 cups tomato, chopped; 9 cups chicken bullion; 1/2 cups flour; turkeys, whole

Preparation

Melt 1 ½ sticks of butter and remove from heat, add the honey, lemon and orange zest, thyme, and chipotle. Refrigerate until firm. Set aside ½ cup for the gravy. Loosen the skin of the turkey breast and carefully place the remaining prepared butter underneath. Baste the rest of the turkey and season with salt and pepper.
