We boil a couple of eggs. In the meantime, we prepare the meat. In a bowl, we add the minced meat, add the ketchup, and mix well. We gradually add and mix in the breadcrumbs, salt, black pepper, and finally the egg. We mix everything well and let it marinate in the bowl covered with plastic wrap (the one used for wrapping sandwiches). Now let's move on to the tortilla part. We prepare everything as if we were making a tortilla, just like we did with the Potato and Chorizo Tortilla Empanada. We chop the potatoes, the onion, and the garlic clove and put them to fry. When they are halfway done, we remove them from the heat and set them aside (without oil) in a bowl until they are at least lukewarm, as if they are still hot when we add the beaten egg, we risk it curdling. Once they are at the right temperature, we beat 2 eggs and add them to the potatoes, mixing well. Now we have the meat and the tortilla prepared for cooking. Now we just have to assemble the pie. In the meantime, we will preheat the oven to 180ºC. Before placing anything in the mold, we add a little oil, just enough to grease the bottom and sides of the mold with the help of a bit of kitchen paper. Initially, it wouldn’t be necessary because the bacon will release quite a bit of fat, but just in case. Now we can start placing each ingredient in order. We start by placing the bacon across the width of the mold so that it covers the bottom and sticks to the sides. Now we add the minced meat, trying to distribute it more or less evenly. Next, we take the boiled eggs. We cut them in half and place them into the minced meat until they are at the same height, with the cut side facing out (showing the yolk). On top of the boiled eggs, we place slices of cheese, and on top of the cheese, the piquillo peppers cut in half. We just need to pour the tortilla mixture up to the edge of the mold. Cover with aluminum foil so that the tortilla layer does not burn and place it in the oven at 180ºC. Keep it covered for 20 minutes. After that, remove the aluminum foil and leave it for another 20 minutes approximately, watching that the color of the tortilla layer does not brown too much. Once ready, take it out of the oven, give it a few taps against the table or countertop to release it well, and unmold. The appearance of the toasted bacon is irresistible. Ideally, it should be eaten freshly out of the oven, being careful as the cheese is very hot, but if not, you can heat it later in the microwave without any problem. It’s delicious alone or accompanied by your favorite sauce.
