Ingredients: 250 grams bacon; 350 grams meat, minced; 3 tablespoons ketchup; 1 tablespoon bread crumbs; 1 egg; 2 eggs, boiled; 6 slices cheese; 4 bell pepper, piquillo; black pepper; salt; olive oil; 2 eggs; 2 potatoes; 1/2 onions; 1 clove garlic

We boil a couple of eggs. In the meantime, we prepare the meat. In a bowl, we add the minced meat, add the ketchup, and mix well. We gradually add and mix in the breadcrumbs, salt, black pepper, and finally the egg. We mix everything well and let it marinate in the bowl covered with plastic wrap (the one used for wrapping sandwiches). Now let's move on to the tortilla part. We prepare everything as if we were making a tortilla, just like we did with the Potato and Chorizo Tortilla Empanada. We chop the potatoes, the onion, and the garlic clove and put them to fry. When they are halfway done, we remove them from the heat and set them aside (without oil) in a bowl until they are at least lukewarm, as if they are still hot when we add the beaten egg, we risk it curdling. Once they are at the right temperature, we beat 2 eggs and add them to the potatoes, mixing well.
