Boil the chicken with a piece of onion, cilantro, and a sprig of mint to add flavor. Roast the tomatoes. Once the tomatoes are ready, blend them in the blender along with the peanuts, garlic, and the desired amount of chipotle, adding a bit of chicken broth (about 1/2 cup).
