Ingredients: 1 kilo pork, or chicken breast; 1 achiote; 1 pinch pepper, fat; 1 pinch oregano; 1 cup apple cider vinegar; 1 cup water; 5 bitter oranges; salt, to taste; 2 Habanero chiles; 1 red onion, or red; 1 kilo corn tortillas

Blend the achiote, pepper, oregano, vinegar, water, and the juice from sour oranges (if unavailable, use regular oranges and add a little more vinegar) and salt. Pork (preferably a combination of ribs and lean meat) or chicken (breasts) is marinated with the blended mixture and left to marinate overnight if possible.
