Season the meat with salt and pepper and let it rest for 1/2 hour in the fridge; in a skillet with enough hot oil, sauté the onion until it turns caramelized, then remove from heat and set aside. Once the onion is removed. In the same skillet, add the meat, stirring constantly, letting it cook well and brown a little; when it's ready, remove from heat and set aside.
