Ingredients: 2 tablespoons olive oil; 2 Poblano chiles, in strips; 1 onion, in slices; 6 sausages, your preferred ones; 1 cup green salsa; 1/2 cups fresh cilantro, finely chopped; 6 hot dog buns; 2 ounces monterey cheese , spicy jack cheese in thin slices; cotija cheese , or crumbled feta cheese

Heat the olive oil in a skillet over medium heat. Add the strips of poblano pepper and the onion, add salt to taste, and cook until the onion is translucent and the strips are soft, about 10 minutes. Set aside the pepper and in the same skillet, heat the sausages by adding water to cover them. Bring the water to a boil and cook for 5 minutes.
