Ingredients: 16 quail, clean, brushed with butter; 100 grams unsalted butter; 1 1/2 onions, sliced thin; 3 cloves garlic, chopped; 2 teaspoons flour; 1 1/2 cups honey; 1 cup chicken broth , warm; 2 leaves bay; 600 grams tamarind pulp, concentrated; 4 chipotle chiles, marinated and ground with their broth; 1 pinch pepper

Preheat the oven to 180 degrees Celsius for 30 minutes. Tie the legs of the quails with cooking twine. Place them on a greased tray with the breast side up. Cover them with aluminum foil and bake for 20 minutes.
