Ingredients

8 portions
  • 6 beets
  • 1 tablespoon sugar
  • 8 carrots
  • 10 oranges
  • 6 apples, green or red
  • 3/4 cups orange juice
  • 1 1/2 cups roasted peanut
  • 3 cups romaine lettuce
  • 2 jicamas
  • 4 radishes

Preparation

Peel and cut the beets into cubes, put them to cook in a pot with enough water. Once cooked you can reserve a cup of the water where they were cooked for the dressing.
Wash, peel and cut the carrots into small squares and cook them in a pot with water and a handful of sea salt.
Peel the apples, remove the center and cut them into small cubes. Then peel the jicamas and cut them into thin sticks.
Remove the peel from the oranges and remove the segments with the help of a sharp knife, removing the white part that is very bitter.
Place all the fruit and vegetables in a salad bowl. Pour into the cup of the beet cooking water (optional), the orange juice and the roasted peanuts. Laminate and refrigerate for 2 hours.
Put a bed of lettuce in another bowl, place the salad in the center and garnish with sliced radishes.

PRESENTATION

Serve in a large platter so that everyone can serve themselves when they sit down at the table.

TIPS

Use seasonal ingredients like lime wedges and sugar cane strips.
