Remove the stems from the apples and remove the heart. Peel one third of the top part of the apple and place them in a refractory. Fill the apples with raisins and nuts in the center.
Stir the orange juice, the orange zest, the honey, the nutmeg and the cinnamon. Put it around and inside the apples.
Cover the refractory with aluminum foil and bake for 45 minutes at 190 centigrade. Remove the foil and bake another 10 minutes more. See if they are cooked with a toothpick that must enter without resistance.
