Beignets (Fritters) of Apples with Apricot Sauce

  • 1/4 cups milk, warm, (dough for sweet donuts)
  • 1 cup flour, (dough for sweet donuts)
  • 3/4 teaspoons active dry yeast, (dough for sweet donuts)
  • 1 1/2 teaspoons sugar, (dough for sweet donuts)
  • 1/2 teaspoons salt, (dough for sweet donuts)
  • 2 tablespoons unsalted butter, melted, (dough for sweet donuts)
  • 1/3 cups beer, warm, (dough for sweet donuts)
  • 1 tablespoon vegetal oil, (dough for sweet donuts)
  • 3 egg whites, (dough for sweet donuts)
  • 1/3 cups liqueur, of apple (honey)
  • 1 lemon juice, (honey)
  • 2 tablespoons sugar, (honey)
  • 1/2 cups Water, (honey)
  • 3 apples, (honey)

  • 1 cup apricot jam, (sauce)


Dough for Sweet Donuts: Place the flour in a large bowl and make a hole in the center. Dissolve the yeast in the warm milk and place it in the hole. Add the sugar, salt and melted butter by beating lightly. Incorporate the flour gradually, and continue beating until the dough is smooth. Add the beer, beating. Spray the dough with the tablespoon of vegetable oil to prevent the formation of a crust. Cover the container with plastic film and let the dough grow at room temperature for 45 minutes. The whites will be beaten and included in the dough just before frying.
Honey: Mix the water with the sugar in a pot and stir until dissolved. Simmer 2 minutes. Remove from heat and cool to room temperature. Add the apple liqueur and the lemon juice.
Apples: Peel and remove the heart of the apples and cut them into slices. Place them in a deep bowl. Pour the honey on top and marinate, turning them occasionally for 30 minutes. Remove the apples from the honey and dry with absorbent paper. Reserve honey.
Sauce: Process or liquefy the apricot jam and pour it into a pot with the reserved honey. Bring to a boil for 3 minutes. Remove from heat and keep warm. Heat plenty of oil in a pan. When the dough has risen, beat the whites until stiff and gradually add to the dough. Put the apple slices in the dough and then take them to hot oil. It is best to fry only 2 slices of apple at a time so as not to cool the oil. The apple slices should go to the bottom and then rise to the surface smoothly. If they remain in the bottom it means that the oil is not hot enough. Fry the fritters until they are golden brown, turning them with a wooden spoon until they have an even color. Remove from the pan and drain on absorbent paper. Keep them warm in the oven while the others are fried. To serve, arrange the beignets or fritters in each dish and sprinkle with powdered sugar. Serve the apricot sauce in a separate sauceboat.
