Ingredients: 1 tablespoon REXAL® baking powder, 15 g; 2 1/4 cups flour, 450 g; 1/2 teaspoons salt, 4 g; 7 eggs; 3/4 cups vegetable oil, 187 ml; 1 cup sugar, 200 g; 2 carrots, 250 g, large, skinless, in large cubes; 1/4 cups walnuts, 50 g, chopped; 1 cup cream cheese, 200 g, diced, at room temperature, for the cream cheese; 3 tablespoons lime juice, 45 ml, for the cream cheese; 2 cups icing sugar, 400 g, for the cream cheese; walnuts, chopped, for decoration; carrot, in slices, for decoration

Preheat the oven to 180 °C. Blend the eggs, vegetable oil, sugar, flour, REXAL® baking powder, and salt. Mix the ingredients until you obtain a homogeneous and slightly thick mixture. Pour into a greased bundt pan, and finally add chopped nuts. Bake for 40 minutes at 180 °C.
