Blintzes are very similar to crepes, except they are fluffier, which most people prefer. They are filled with jam and cream cheese.

Preheat the oven to 180ºC. Mix the cheese with the egg and sugar using a fork and incorporate well. Place 2 teaspoons of cheese in the center of each crepe, fold in from two sides, and then roll to keep the filling inside, forming rectangles. Melt a bit of butter in a skillet and lightly brown the crepes, then place them in a baking dish. Bake for 8 minutes. To serve, place 2 on a plate and add a bit of cream, then jam, and sprinkle with nuts. Serve hot. They can also be prepared in advance and then browned and heated on the same day.
