Rich coconut cake and rum, perfect for a wedding or any other event where you want to show off, is a delicious dessert that everyone will love. Animate to prepare it and surprise them.

  • 8 eggs
  • 4 teaspoons Water, tibia
  • 240 grams sugar
  • 1 lemon, get the juice
  • 240 grams flour
  • 120 grams cornstarch
  • 1 tablespoon royal baking powder
  • 1 cup coconut cream, (to wet the cake)
  • 1/2 cups evaporated milk, (to wet the cake)
  • 1/4 cups Rum, (to wet the cake)
  • 1 1/2 cups grated coconut, to decorate
  • 2 cups sweet whipped cream, to decorate


Beat the egg yolks with the water and half the sugar until they are bleached, continue beating and add the lemon juice.
Beat the whites to the point of meringue with the rest of the sugar.
Sift the flour with the cornstarch and the baking powder and add them little by little to the mixture of yolks and to the middle of the meringue, and out of the blender surround it incorporates the rest of the meringue.
Pour the mixture into a circular mold, greased and floured.
Put in a preheated oven at 180ºC for 25 or 40 minutes.
Once out of the oven let it cool and cut it into three parts and wet it with the following.
Boil the coconut cream with the evaporated milk, remove from the heat and add the rum, use only half of the mixture.
To the rest of the mixture add half a cup of whipped cream and half the grated coconut, with this stuffed and covered the cake.
Finally sprinkle shredded coconut and decorate with cherries.


If you want you can make the filling with pineapple and coconut.
