Preparation
In a food processor, lightly crush the nuts (walnuts, almonds, pistachios and peanuts). Place the ice cream in a bowl and add the nuts, stir and freeze. Every half hour, remove the bowl from the refrigerator and mix again (to avoid crystals forming in the ice cream).
Grate the lemon peel.
Cut the apple into thick slices.
Place the cream cheese (at room temperature) in a bowl. Add the lemon zest, sugar, cinnamon and nutmeg. Stir
On a bread slice, spread 2 tablespoons of cream cheese, place two slices of apple and cover with 2 tablespoons of cream cheese. Place a slice of bread on top. Repeat this step with the rest of the bread. Toast the sandwiches and cut them in half (diagonally).
Stack 3 halves of sandwiches, place ice cream on top of these and sprinkle a little cinnamon.
