Ingredients

10 portions
  • 2 cups wheat flour
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon powder
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons peppercorn, milled
  • 1/4 teaspoons ground clove
  • 2 cups carrot, grated
  • 1/2 cups walnut, chopped
  • 1/2 cups raisin, sultana (blonde)
  • 3/4 cups salt
  • 2/3 cups raw sugar
  • 3 eggs
  • 1 teaspoon liquid vanilla
  • 3 cups jocoque, natural, for bitumen
  • 4 tablespoons powdered sugar, for bitumen

Preparation

Preheat the oven to 180 ° C. Pass through a colander the flour, baking powder, cinnamon, baking soda, pepper and cloves. Add to this mixture carrots, nuts and raisins (as a breadcrumb)
Beat Light Iberia® Margarine with the sugar and once it is well incorporated, add the eggs and vanilla.
Add the flour mixture little by little and beat until there are no lumps.
Pour the mixture into a previously greased mold and bake for 30 minutes or until a toothpick comes out clean. Allow to cool and unmold.
To decorate, beat the jocoque with sugar. Cover the cake with this mixture and refrigerate until ready to serve.

PRESENTATION

Decorate each slice with carrots made of bitumen or a bit of finely chopped caramelized walnut.

TIPS

You can substitute half of the glass sugar for cocoa.
