The cheesecake is a classic pastry worldwide and although there are different versions according to each country, the truth is that it is a delicious dessert. We created for you the traditional New York cheesecake with a delicious coffee flavor, with a base of chocolate cookies and a delicious white chocolate cream that make it completely irresistible.

Ingredients

  • 150 grams of chocolate cookie for the base
  • 1/2 Cup of Butter melted, for the base
  • 4 pieces of San Juan® egg
  • 1 1/2 cups of sugar
  • 600 grams of cream cheese at room temperature
  • 500 milliliters of cream to beat
  • 1/4 of Cup of soluble coffee
  • 2 teaspoons of vanilla
  • 300 grams of White chocolate for the ganache
  • 100 milliliters of cream to beat hot for the ganache
  • 1 tablespoon of cinnamon powder for the ganache
  • to taste of cookie of waffle, to decorate
  • to taste of Chocolate chips to decorate
  • to taste of cinnamon powder to decorate

    Preparation

    Preheat the oven to 170 ° C.
    Place the cookies in an airtight bag and, using a rolling pin, crush the cookies until you get a fine powder.
    Mix the cookies with the butter and place on a cake base, press to compact forming a base. Reservation.
    Beat the pieces of San Juan® egg with the sugar until they change color, add the cream cheese cream until integrated, add the cream to beat and beat until the cream doubles its volume. Gradually add coffee and vanilla essence.
    Pour the cheesecake mixture over the cookie base and bake for 1 hour. Allow to cool and refrigerate at least 2 hours.
    For the ganache, mix hot cream with white chocolate and cinnamon until incorporated. Refrigerate at least 30 minutes.
    Beat the ganache until firm peaks and cover the cheesecake with this mixture.
    Decorate with the cookies, chocolate chips, cinnamon powder.
    It serves.

    Cover with white chocolate ganache and decorate with cookies, chips and cinnamon.

    TIPS

    When the cheesecake is finished baking, it is important that you let it cool completely in the oven off, otherwise it will be lowered.
