This cheesecake without baking is made very fast and when adding mascarpone cheese, it is given a delicious touch.

Ingredients

10 portions
  • 50 grams unsalted butter
  • 100 grams bitter chocolate, quality, in pieces
  • 150 grams Marie biscuit, crushed
  • 400 grams mascarpone cheese
  • 2 lemon zest, and its juice
  • 2 tablespoons powdered sugar, and something extra to sprinkle
  • 225 grams strawberry, without sprigs and in halves

Preparation

Melt butter and chocolate in a bowl, in a bain-marie, stirring occasionally. Add the cookie crumbs. Pass the mixture to the mold and press down with a wooden spoon.
Beat the mascarpone cheese in a bowl with the grated zest and the lemon juice, reserving some zest to decorate. Add the sugar, to taste. Spread the cheese mixture on the cookie base and refrigerate at least 1 hour.
To serve, arrange the strawberries around the edge of the cheesecake and sprinkle the reserved lemon zest in the center. I sprinkled icing sugar and cut into portions.

TIPS

Prepare the cheesecake in advance. It can be done 1 day before and refrigerate.

Facilita de preparar y muy rápida de hacer, La recomiendo, y voy a preparar la misma receta pero sustituyendo la fruta por duraznos o melocotones.
