For the coffee cream, heat the whipping cream over medium heat, add the instant coffee, ground cinnamon, dark chocolate, and cook until all ingredients are dissolved. Place in a bowl and cover with cling film touching the cream to avoid air. Refrigerate until well chilled. Remove the whipping cream and beat the cream until it forms peaks. Place it in a piping bag with a star tip and set aside.
