Enjoy this summer with a very refreshing dessert: a soft sponge cake, filled with cheese with a touch of lemon and a combination of very tropical fruit such as coconut, strawberries, kiwi and peach. This colorful dessert will become your favorite.

Ingredients

  • 6 pieces of egg white
  • 1/4 of Cup of sugar
  • 6 pieces of yolk
  • 1/4 of Cup of sugar
  • 1 teaspoonful of vanilla
  • 3/4 of Cup of flour
  • 1/4 of Cup of Butter melted
  • enough of sugar glass to roll up
  • 3 packages of cream cheese 190 gc / u for the filling
  • 1/2 Cup of cream to beat for the filling
  • 1/2 Cup of sugar glass for the filling
  • 1 tablespoon of lemon zest for the filling
  • 1 tablespoon of lemon juice for the filling
  • 1/4 of Cup of grated coconut toasted
  • 1/4 of Cup of peach in syrup for the filling
  • 1/4 of Cup of Strawberry for the filling, washed, disinfected and diced
  • 1/4 of Cup of Kiwi cut into cubes
  • to taste of Strawberry to decorate
  • to taste of Kiwi to decorate
  • to taste of blueberry to decorate
  • to taste of mint to decorate
  • to taste of grated coconut to decorate

    Preparation

    Preheat the oven to 180 ° C.
    Beat the whites with sugar until they double in size. Reservation.
    Beat the yolks with the rest of the sugar and the vanilla essence until they change color, integrating the egg whites to the yolks in a soft and enveloping way.
    Add the flour and ground almonds with the help of a strainer or sieve to the previous preparation, pour the melted butter in the form of thread and integrate in an enveloping way.
    Pour the mixture on a tray with waxed paper, spread and bake for 8 minutes.
    Sprinkle some icing sugar on a dishcloth and place the cake, remove the paper and roll it still hot, let cool.
    For the filling, beat the cream cheese with the whipping cream, the icing sugar, the lemon zest, the lemon juice and divide it into two parts.
    Unroll the roll and add a part of the filling, with the help of a spatula, add the grated coconut, the peach, the strawberries and the kiwi. Roll up again and refrigerate the hour.
    Cover with the rest of the filling, decorate with fruit, mint and coconut. Serve and enjoy.

    PRESENTATION

    Garnish with roasted fruit, mint and coconut.

    TIPS

    Do not let the cake cool too much, as it is too damp it could stick on the cloth and break.
