  • 3 egg yolks, whole
  • 150 grams unsalted butter, softened
  • 150 grams powdered sugar, sifted
  • 1 lemon zest, finely grated

  • 100 grams self-raising flour


Carefully slide the egg yolks into a pot with boiling water over low heat. Cook for 5 minutes, until they are very hard and then remove them from the water and wait for them to cool. When they are cold, pass them through a fine sieve, pressing with the back of a spoon. Take them to a small bowl.
With an electric mixer , combine the butter and the icing sugar until a smooth and fluffy mixture is achieved. Add the yolks and lemon zest and robe to integrate well.
Sift together the flours and add them to the mixture, beating well to form a smooth and smooth dough. Place the dough in a plastic bag and refrigerate for 30 minutes to make it firm. Preheat to 325 ° F (180 ° C) and prepare three or four non-stick baking trays.
On the lightly floured surface, stretch the cold dough to 1 centimeter thick. Cut the cookies into flower shapes or other shapes. Use a large cutter and a small one to make the rings.
Arrange the cookies in the trays, and cook in the upper third of the oven for 15 to 17 minutes, until they begin to brown.


The canestrelli are very delicate when they are hot, it is better to let them cool for about 10 minutes in the trays before passing them through a rack to cool them well.


The canestrelli will be stored for 5 days in an airtight container, in this way you will be able to store them very well.
