This Italian recipe is completely delicious. It consists of a light and crunchy dough filled with ricotta cheese with icing sugar and orange peel and chocolate chips. The recipe does take time but it is a good luxury when it is finished.

Ingredients

  • wheat pasta INGREDIENTS FOR THE CANNOLI MASS
  • 1 1/3 cups of flour
  • 1/4 of tablespoon of Salt
  • 1 tablespoon of sugar
  • 2 spoonfuls of cocoa powder
  • 2 spoonfuls of Butter
  • 6 spoonfuls of Marsala wine
  • 2 eggs milkshakes
  • vegetable oils to fry
  • wheat pasta INGREDIENTS FOR RICOTTA FILLING
  • 3 cups of ricotta cheese
  • 1 1/3 cups of powder sugar
  • 1 1/2 spoonfuls of vanilla essence
  • 1/3 of Cup of caramelized orange peel
  • 1/3 of Cup of bittersweet chocolate chip

    Preparation

    TO MAKE THE MASS: Start by mixing the flour, salt, sugar and cocoa in a deep bowl. Mix well.
    In an electric mixer with the mash blade mix the flour mixture with the butter until you get a crumbed dough. Add the Marsala wine and continue mixing.
    Place the dough on a clean floured surface and knead for 3 minutes. Make a ball and cover with egapak paper, allow it to rest for 1 hour.
    Divide the dough into 4 balls and pass the dough through your pasta machine at the largest opening you have. Fold the dough in thirds and go through the machine again, repeat this 3-4 times more. Repeat with the other dough balls.
    Cut a card in an oval of 7 x 9 cm to use as a base to cut the dough. Place the cardboard on a dough and using a sharp knife cut ovals (all that fit in your flattened dough).
    Heat 6-7 cm of oil in a large pot over medium heat. While hot, make the cannoli using their cannoli molds and moisten the dough with a little whipped egg white. Place on a baking sheet with egapak paper.
    Cook the cannoli by placing 3-4 tubes of cannoli with dough in the boiling oil and after 45 seconds using tongs remove the dough from the tube, remove the tubes from the oil and allow the dough to finish browning, repeat with all the ovals . Allow them to cool before filling.
    TO MAKE THE RICOTTA FILL: In a deep bowl, mix the ricotta with the icing sugar and vanilla until you get a fluffy mixture with a balloon whisk.
    Add the orange peel and the chocolate sparks and finish whipping.
    Fill the cannoli with a pastry bag, then pass the edges through the chocolate chips and serve immediately.

    PRESENTATION

    You can decorate the Cannoli with icing sugar.

    TIPS

    For this recipe it is recommended to use a machine to make pasta and molds to make Cannoli.
