In this Easter, enjoy these delicious carrot cupcakes with cream cheese frosting. They can be decorated with marzipan carrots or whole walnuts.

Ingredients

20 portions
  • 2 cups sugar
  • 1 1/3 cups vegetal oil
  • 1 teaspoon vanilla extract
  • 3 eggs, big
  • 2 cups flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 3 cups carrot, finely grated
  • 1 cup walnut, chopped
  • 340 grams cream cheese
  • 230 grams unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 kilos powdered sugar

Preparation

Preheat the oven to 200 °C (350°F).
In a bowl, mix the sugar, and vanilla extract. Add the eggs, one at a time.
In separate bowl, mix flour, cinnamon, baking soda and salt.
With the mixer on low speed, add half of the flour mixture to the egg mixture. Add grated carrots, and nuts. Finally, add the rest of the flour and stir well. Mix until it is all stirred.
Put the paper cupcakes on a tray of cupcakes.
Fill each of the cupcakes up to 3/4.
Bake at 200 °C (400 °F) for 10 minutes and then reduce the temperature to 180 ° C (350 F) and cook for another 35 minutes.
Let the cupcakes cool in a rack when they are ready.

Hola tu receta tiene algo mal se desbordaron los cupcakes y no tenía un sabor bueno la masa creo que le falta la nuez moscada el clavo para el sabor característico del pastel de zanahoria en cupcakes
