Ingredients

12 portions
  • 280 grams bittersweet chocolate, (fondant)
  • 280 grams butter, at room temperature (fondant)
  • 6 egg yolks, (fondant)
  • 6 eggs, (fondant)
  • 3 cups powdered sugar, (fondant)
  • 1 cup flour, (fondant)
  • 1/2 cups red fruit, strawberry, raspberry, blueberry, blackberry (coulis)
  • 1/4 cups powdered sugar, (coulis)
  • 1 tablespoon lemon juice, (coulis)
  • cranberries, frescoes to decorate

Preparation

Fondant: Melt the chocolate and butter in a pot over low heat so it does not burn.
In a bowl beat the yolks and the eggs and, as they are well integrated, add the icing sugar. Then add the chocolate and finally the sifted flour.
Fill in a silicone mold for cupcakes up to 3/4 with the mixture. You can also use caps so they do not stick if you do not have a silicone mold.
You should refrigerate the cakes because they should be served almost immediately. 10 minutes before serving, preheat the oven to 230 ° C.
Cook 5 minutes and remove from the oven (Add two minutes if they are cold). Take them out of the molds.
Coulis: You can prepare this in advance so that when you're baking your cupcakes you're ready.
In a pan over a low heat, cook the red fruit, the icing sugar and the lemon juice. Let it boil for 5 minutes.
Strain the mixture with a Chinese sieve and press the fruit to extract the juice.

PRESENTATION

You can serve the cake accompanied by vanilla or chocolate ice cream. Arrange a few blueberries around the fondant and with the coulis arms a heart on the plate.

TIPS

Remember that these cakes should be barely baked so that the center is soft.
