The dark chocolate brownie is a typical dessert in the cuisine of the United States, where there are a lot of varieties and presentations. Brownies can be made only with chocolate, or include other foods such as banana, walnuts, toffee or caramel. In addition, brownies can be presented covered with fondant or different frostings. In our case, we have chosen to make a dark chocolate brownie, to maintain the taste of chocolate.

  • 90 grams flour
  • 330 grams brown sugar
  • 60 milliliters espresso coffee
  • 220 grams dark chocolate, 70%
  • 250 grams butter
  • 3 eggs
  • 35 grams unsweetened cocoa powder
  • 3 grams salt
  • 5 grams chemical yeast


Preheat the oven to 180ºC. Spread the mold with butter and cover the inside with baking paper, making it protrude a little around the edges.
Cut 200 grams of chocolate (reserve the other 20) and butter in pieces. Mix in a bain-marie, preventing the chocolate from burning. Once the chocolate and butter have melted, add the sugar and stir until the majority dissolves. Normally there will be a small amount of unmelted sugar, which will allow you to acquire the characteristic brownie texture.
Remove from the fire. Once the mixture has cooled a bit, incorporate the eggs one by one. Once the eggs are mixed, add the espresso cold (the coffee is to enhance the chocolate flavor, although you may not incorporate it), and the remaining 20 grams of chocolate in small pieces.
Mix flour, salt, yeast and cocoa powder in a separate bowl. Stir until there is a homogeneous mixture. Add the dry ingredients to the wet ones and mix with a spatula until a homogenous mass is obtained. Do not over mix the dough, as it could be a very hard black chocolate brownie once cooked.
Pour the mixture into the mold and cook in the oven until a stick is inserted in the center, leaving clean (about 40-50 minutes depending on the oven).
Once cooked, remove the black chocolate brownie from the mold using the baking paper to cool it. Place it on a rack so it cools completely. You can sprinkle powdered sugar or cocoa powder to decorate.
