Ingredients: 500 grams chocolate bar, (use Oaxacan chocolate); 1 cup cow's milk; 2 1/2 cups whipping cream; 16 raspberries; 4 leaves fresh dill, mint

Grate the chocolate, and place a bowl over a double boiler. Add the grated chocolate and gradually incorporate the milk. Stir slowly until the mixture is dissolved, add the sugar, and beat until the mixture is smooth, then let it cool. In a separate bowl, whip 2 cups of heavy cream using a mixer or a whisk until fluffy (aerated). Add the chocolate while continuing to stir, being careful not to deflate the cream. Refrigerate for half an hour.
