In a bowl, arrange the flour, a teaspoon of the salt and the butter previously diced. Incorporate milk little by little. With the hands, disarm the butter cubes while the dough is joined without a homogenous mass. Cover the dough with plastic wrap and reserve in the refrigerator for 1 hour.
Peel, remove the center and cut the apples into large pieces. Put the apples in a bowl and add the remaining salt, sugar and cinnamon. Mix the ingredients.
Divide the dough into two equal parts and stretch with a rolling pin so that it is 1 cm thick. With one of the halves, line the base of a ribbed foot mold of 25 cm in diameter. Pour the apple filling over the mold and cover with the other piece of dough. Make holes in the surface so that during cooking the steam can escape without the foot breaking. Seal the edges with a knife at the same time that excess mass is removed.
Bake at 175 ° C for 45 min, until the filling is cooked and the surface is browned.
