Ingredients: 1/2 liters whole milk; 5 egg yolks; 170 grams sugar; 2 tablespoons instant coffee; 200 grams whipping cream; 40 grams icing sugar; 1 vanilla bean; 3 sheets unflavored gelatin powder; 1 teaspoon cornstarch; 1/2 packages María cookies

Separate a small cup of milk in which we will dissolve the cornstarch; and the rest we will bring to a boil along with the vanilla. Beat the sugar and egg yolks, gradually add the instant coffee and milk, then the sheets of gelatin that we have soaked in cold water.
