Blend the D'Gari® black gelatin with hot water for 2 minutes, then add the condensed milk, half cream, and whipping cream and blend for 1 minute. Freeze for 10 minutes and set aside. Place the previous mixture in a mixer bowl and beat for 10 minutes, until it doubles in size, then gradually pour in the sparkling wine and integrate with the help of a spatula or miserable in a folding manner, so as not to remove the air.
