DISSOLVE the coffee well in the hot water. Add it to the cream cheese in a medium bowl, beating it with a whisk until well combined. Add the sugar; mix it well. Fold in the topping. PLACE 16 cookies at the bottom of an 8-inch square dish; spread half of the cream cheese mixture on top. Repeat the layers. Refrigerate the dessert for several hours. Use grated chocolate to sprinkle over the dessert at the time of serving.
