  • 2 eggs
  • 1 cup milk
  • 1 cup flour
  • 2 tablespoons butter, melted
  • 1/2 teaspoons salt
  • 1 1/4 cups Water
  • 1 package Lemon Jelly
  • 1 tablespoon cornstarch
  • 2 cups blueberry, frozen
  • 1/2 cups whipping cream


Beat the eggs and milk well in a medium bowl with a wire whisk. Add flour, butter and salt; Beat until creamy. Let the shake stand for 10 minutes. Heat an 8-inch skillet, lightly greased, over medium-high heat. Pour 1/4 cup of smoothie with a ladle into the pan; cook 1 to 2 minutes per side or until both sides are browned. Remove the crepe from the pan; Cover it to keep it warm. Repeat with the rest of the shake until you complete 8 crepes.
Boil 1 cup of water in a large pot over medium-high heat; add the gelatin powder and stir at least 2 minutes until completely dissolved. Mix 1/4 cup of remaining water with the cornstarch; incorporate it into gelatin. Let this boil, stirring constantly. Add the blueberries; stir Cook 3 to 5 minutes or until very hot, stirring occasionally.
Fold each crepe in half and again in half to form a triangle. To serve, cover each crepe with 1/3 cup of the gelatin mixture, warm; Complete with 1 tablespoon of whipped cream.
