Ingredients

12 portions

  • 3 eggs
  • 2 cups flour
  • 1/2 teaspoons baking soda
  • 1/3 teaspoons salt
  • 3/4 cups sugar
  • 1/2 cups butter
  • 1/2 cups milk cream, or cream
  • 1/2 teaspoons yeast
  • 1/2 teaspoons baking soda
  • 2 cups sugar, (coverage)
  • 1 cup egg white, (coverage)
  • 3 drops lemon juice, (coverage)
  • cherries, to decorate
  • chocolate chips
  • chocolates, (coverage chips)
  • strawberry jams, (filling)

Preparation

Place the unpeeled bananas in the oven at 200 ° C for 15 minutes, put them to rest for 10 minutes, peel and crush until you get a puree. Leave the oven on.
Mix and sieve the flour, baking soda, salt, baking powder and yeast.
The whites are separated from the yolks and the whites are reserved.
Beat butter and sugar until you get whitish cream.
Incorporate the yolks of the eggs one by one, into the butter mixture until a homogeneous mass is seen.
The mashed banana is added to the previous mixture until a well-beaten mixture is obtained.
The mixture of dry ingredients is added little by little to the previous mixture.
The whites are beaten until firm peaks are obtained and they are incorporated into the mixture little by little and in an enveloping way so that the whites do not lose air.
Pour the mixture into the cups 3/4 of the mold and bake for a space of 15 to 20 minutes at 180 ° C or until punctured with a stick comes out clean, let cool.
Swiss meringue cover: Mix the egg whites with the sugar and place them in a bain-marie for 7 to 10 minutes, the mixture should be more or less elastic when the whites and sugar are completely integrated. Add to the blender and mix together with the lemon drops for approximately 8 minutes.
When the cupcakes are cold open a hole in the center of the cupcake and fill with the strawberry jam, cover and decorate with the Swiss meringue, place a cherry on the tip of the cupcake and sprinkle the sparks and chocolate chips.

PRESENTATION

Use a pastry bag with a large star nozzle.
