Ingredients: 300 grams butter; 200 grams sugar; 2 eggs; 500 grams flour; 1 tablespoon vanilla essence

Mix the butter (at room temperature) with the sugar. Add the eggs and vanilla extract, continue stirring. Add the flour and continue beating; when half of the flour is incorporated, knead by hand. Let the dough rest for an hour in the refrigerator covered with plastic wrap. Preheat the oven to 180º. Place the dough between two pieces of clear plastic wrap and, using a rolling pin, roll it out to a thickness of half a centimeter. Cut the cookies with a cookie cutter and carefully place them on a non-stick baking tray. Bake for about 15-20 minutes, until they look golden but still a bit soft. Then let them cool on a rack.
