Ingredients

  • 6 bananas from Tabasco
  • 150 grams brown sugar
  • 2 lemons
  • 250 grams puff pastry
  • 1 tablespoon cinnamon powder
  • 1 raja cinnamon
  • 2 tablespoons liquid vanilla
  • 1 cup whipping cream
  • 1 cup passion fruit pulp, or mango
  • 2 1/2 cups milk
  • 1/2 cups butter
  • 1/2 cups refined sugar

Preparation

Preheat the oven to 180 ° C for 15 min.
In a colud, boil milk, vanilla, cinnamon slice, cardamom and 5 bananas without skin for 3 min. After 3 min, remove only 2 bananas and leave the rest for 8 more minutes; take out and reserve.
Bananas that you removed, place them on a baking sheet, varnish them with melted butter and sprinkle with refined sugar, a touch of cinnamon powder and bake until they are well browned; Take out and reserve.
In the food processor add the bananas with a little of the cooking milk; to make a puree. The texture should be thick and creamy.
Refrigerate until very cold.
With the help of a cutter, make thin, round slices with the puff pastry. Fry in hot oil. Reservation.
Lift the cream to beat.
For the assembly: Form a tower in the following manner starting from the bottom up; Banana puree, puff pastry sheet, banana puree, whipped cream, puff pastry sheet, banana puree, whipped cream, puff pastry sheet, banana puree and flamed bananas. Sauté with passion fruit pulp and decorate to taste.
