Ingredients

8 portions
  • 50 grams yeast, cool
  • 125 grams lard
  • 175 grams sugar
  • 1 lemon, just the zest
  • 1 orange, just the zest
  • 1 tablespoon liquid vanilla
  • 1 tablespoon cognac
  • 1 tablespoon almond essence
  • 4 eggs
  • 1/2 cups milk
  • 750 grams flour
  • 500 grams dried fruit, and polished

Preparation

Preheat the oven to 170 ° C.
Dissolve the yeast in warm water and let stand.
In a bowl mix the butter with the sugar until it forms a paste.
Add lemon zest, orange zest, vanilla essence, almond essence, cognac, milk and eggs. Mix well.
Add the yeast and flour until the dough does not stick to the walls of the bowl.
Knead well and let rest all night, or from morning to afternoon, keeping the bowl covered. With the precaution of leaving it in a large container because it lifts a lot. Almost triple its size.
Knead again and add the dried fruits.
Separate into two buns and place in molds, paint with an egg and make a cut in the shape of a cross. Let rise 1 hour more.
Bake for about 20 minutes or until a toothpick comes out clean.

PRESENTATION
