Preparation
For the dough: mix the warm water with the yeast in a bowl, let stand 10 minutes.
Mix in a bowl the flour with the salt, the sugar, add the San Juan® egg one by one, add the hydrated yeast, knead until it is integrated.
Add the butter, pour the milk little by little while continuing to knead, to form a soft and smooth dough. Let it rest until it doubles its volume.
For the glaze: in a bowl beat the egg whites, until they change color, add the glass sugar little by little until it is fully integrated.
Separate the glaze in three bowls, in one bowl add red coloring, in another the green coloring. Reservation.
Spread on a floured surface the mass of approximately 5mm in thickness, with the help of a round cutter cut circles of 8 cm in diameter, with the help of a smaller cutter, cut a circle in the center. Ferment on a tray for 15 minutes.
Heat the oil in a saucepan over medium heat, with the help of a turner place the donuts, fry the donuts for 3 minutes on one side, turn over, fry 3 minutes on the other side, until golden brown. Let it cool.
Submerge half of the donut in the glaze of each color, let the excess drain, place in a rack; let it dry
Enjoy with a glass of cold milk.
