Ingredients

7 portions
  • 163 grams almond flour
  • 1 tablespoon Coconut flour
  • 19 grams cocoa powder
  • 10 grams cocoa, European
  • 1/4 cups arrowroot starch
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons sea ​​salt, fine
  • 3 eggs
  • 1/3 cups almond milk, or unsweetened coconut
  • 1 teaspoon liquid vanilla
  • 3/4 cups coconut sugar
  • 1/3 cups avocado oil
  • 2/3 cups coconut cream, without sugar, for the ganache
  • 3/4 cups chocolate, 70% cocoa, chopped, for the ganache
  • enough hazelnut, of cacao natural spreads (such as Sarain spreads), to decorate

Preparation

Heat the oven at 170°C (350°F). Grease a silicone donut pan with coconut spray oil
In a bowl, sift Almond flour and coconut flour, cocoa, European cocoa, arrowroot starch, sodium bicarbonate and sea salt.
Mix the eggs with almond milk, vanilla, coconut sugar and oil, add the dry ingredients and integrate well using a balloon whisk to obtain a homogeneous mixture.
Place the mixture in a pastry bag and fill 2/3 of the mold.
Bake for approximately 20 minutes or until a toothpick comes out clean. Let cool 5 minutes.
Place the baking paper on the mold and with a board turn it over to unmold the donuts.
For the chocolate ganache, heat in a microwave-safe container the coconut cream with honey and avocado oil for 45 seconds. Add the chocolate and mix with a balloon whisk or manual turbo blender until you have a homogeneous mixture.
Decorate the donuts with the chocolate ganache and play around with the spreads. Enjoy

TIPS

The donuts will last fresh for about 4 days without glaze, in a well covered container, or you can freeze them so they last longer.
