Cream the butter with the sugars (brown and refined), add the egg and vanilla extract; sift the flour and then add it to the previous mixture along with the baking soda and salt; beat just until combined. Portion the cookie dough and roll it into balls with your hands; chill. Distribute the pieces on a baking sheet, making sure there is a 3 cm distance between each one, press a little in the middle, and bake for 15 minutes at 180 °C. Cool and serve.
