Preheat the oven to 120 °C. For the crepes: in a bowl, mix the flour with the San Juan® eggs, melted butter, sugar, vanilla extract, and milk until you achieve a smooth, lump-free mixture. Divide the mixture into 3 and color with pink food coloring in 3 different shades, from darkest to lightest, and set aside. Heat a pan with cooking spray, make crepes in different shades of pink, and set aside. In a bowl, beat the cream cheese, heavy cream, and powdered sugar until you obtain a smooth and creamy frosting, then store in the refrigerator. On a board, place a dark pink crepe, spread a little frosting, and cover with another layer of crepe; repeat the process from the lighter color to the darker until finished. Completely cover with frosting, refrigerate, and set aside. On a baking tray with parchment paper, place the rose petals and brush with San Juan® egg whites, sprinkle with sugar, and bake until the sugar caramelizes and the petals are firm. Decorate with the rose petals and macarons.
