Preheat the oven to 120 ° C.
For the crepes: in a bowl mix the flour with the pieces of Egg San Juan®, the melted butter, the sugar, the essence of vanilla and the milk, until obtaining a homogeneous mixture without lumps. Divide the mixture into 3 and paint with the pink dye in 3 different shades, from darker to lighter, reserve.
Heat a pan with the oil spray, form crepes of different shades of rose and reserve.
In a bowl beat the cream cheese, the whipping cream and the glass sugar until you get a smooth and soft bitumen, reserve in refrigeration.
On a board, place a crepe of dark rose, spread with a bit of bitumen and cover with another layer of crepe; Repeat the process from the lightest to the darkest color until you finish. It completely covers bitumen, refrigerates and reserves.
On a tray with baking paper, place the rose petals and varnish with the egg whites of San Juan® Egg, sprinkle with the sugar and bake until the caramelized sugar and firm.
