This strawberry cream cookie cake is the simplest baking recipe you can make. Preheat the oven to 170 °C. For the cookie, in a bowl sift the flour, powdered sugar, ground almonds, then add the butter, egg, vanilla extract, and salt. Knead until you have a smooth dough. Wrap the dough in non-stick plastic and refrigerate for 30 minutes. On a clean surface or a baking tray, roll out the dough with a little flour, until you have a thickness of 3 mm. Using a cake cutter, cut out two bases and the center of them with a ring. Bake for 20 minutes, let cool, and set aside. For the filling, beat the cream cheese and vanilla extract until you have a firm and smooth filling. Place in a piping bag with a plain tip and set aside. On a cake base, place a cookie disc and then fill it with cream bonbons. Place the other cookie base, add strawberries, and finally, brush with apricot jam, add blueberries, and decorate with mint and sliced almonds.
