Preparation
Preheat the oven to 180 degrees centigrade.
In a small saucepan over low heat melt the sugar until it has caramelized. Pour over 6 small molds for flan or soufflé.
In a large bowl beat the eggs with a balloon whisk until they are sparkling. Add condensed milk, coconut milk, vanilla essence, and grated coconut and continue whisking.
Pour the mixture into the flan molds and arrange the molds in a deep baking tray and add water to cover up to 2/3 of the height of the molds.
Bake the flan for 1 hour until done and the center just moves a little.
Remove from the oven and allow to cool for at least 15 minutes. Turn the molds over the plate to use and serve.
