Ingredients

  • 6 egg whites
  • 1 pinch salt
  • 400 grams powdered sugar
  • 250 grams almond flour
  • 2 drops food coloring gel, of the color that you like

  • 350 grams powdered sugar
  • 240 grams butter, to atmosphere environment
  • 2 tablespoons whipping cream
  • 1 tablespoon yellow lemon zest
  • 1 tablespoon pistachio, crushed
  • 1 tablespoon cocoa powder
  • 1 tablespoon Strawberry jam

Preparation

Place the egg whites in a metal bowl and add 1 pinch of salt. Bat with electric mixer until firm peaks form. Add 1 tablespoon of icing sugar and continue whisking. Slice over the clear half of the remaining icing sugar; Beat at high speed until they look very bright. Sift the rest of the sugar and beat again until integrating.

Divide the mixture into four different bowls. It incorporates 1 or 2 drops of dye in each bowl to have masses of different colors.
Line a tray with baking paper. Fill a pastry bag with one of the mixtures and form small circles of 2 centimeters in diameter. Repeat the procedure with the rest of the mixtures, making sure to use a clean pastry bag for each one.
Preheat the oven to 170 ° C. Let the macaroni rest for 30 minutes, while you prepare the filling.
Beat the butter until acremar. Add the icing sugar and continue beating until you have a homogeneous mixture. Add vanilla, cream and whisk again until light and fluffy.
Divide this cream between four different bowls. It incorporates the cocoa, lemon zest, pistachios and strawberry jam in each of the bowls, in order to have four different flavors. Reservation.
Bake the macaroni in the preheated oven for 14 minutes. Remove from the oven and let them cool on the same tray.
Once cold, smear the flat side of a macaroni with the corresponding filling and arrange another macaroni of the same color on top, as if it were a sandwich. Serve immediately or place inside a tightly closed container and refrigerate.
