Ingredients

2 portions
  • 2 Pineapple Cups with Vita + ® coconut milk
  • 3 tablespoons pineapple juice
  • 1 on gelatin
  • enough whipped cream, to decorate
  • enough cherries in syrup, to decorate
  • enough peppermint, to decorate
  • enough grated coconut, to decorate

Preparation

For jello, separate the milk from the fruit of the pineapple cups with Vita + ® coconut milk.
Add the pineapple juice and the unflavored gelatin to the coconut milk and let it completely hydrate. Melt in the microwave for 5 seconds. Set aside.
Pour the ¾ of the fruit that you separated into two cups and fill with the coconut jelly. Refrigerate until completely set.
Once set, decorate with whipped cream, cherries in syrup, a little more pineapple, a mint leaf and coconut.

PRESENTATION

Garnish with whipped cream and cherries in syrup.
