The Italian Biscotti is a hard cookie ideal to accompany a good coffee with milk. This biscotti recipe contains almonds but many variations can be made.

Preparation
In a large bowl, mix together the sugar, butter, brandy, essences, almonds and eggs. Add the flour, baking powder and salt and mix with a wooden spoon until the dough is uniform and very well mixed.
Cover the dough with egapac and let it grow for 30 minutes.
Preheat the oven to 180 degrees centigrade and place a rack in the middle of the oven.
With wet hands take the dough and make two loaves of baguette. Put the bread in a baking sheet.
Cook the loaves for 30 minutes or until golden brown.
Remove the loaves from the oven and let cool for 15 minutes.
With a knife to cut bread cut the biscottis into strips of 2 cm wide (as they appear in the photo).
Put the biscottis on a baking sheet and bake until golden, about 20 minutes. Remove from the oven and let cool.
