For the gelatin, in a saucepan heat the milk with evaporated milk, condensed milk, vanilla extract, cream cheese, cinnamon, and sugar until all ingredients are combined. Add the gelatin, mix and let it cool slightly. Divide the mixture into 3 parts, add red food coloring to one part and green to another. Mix very well and set aside. In a previously greased mold, pour the green gelatin and refrigerate until set. Once set, place the chocoroles and cover with the white gelatin, refrigerate. Once the white layer is set, fill the mold with the green gelatin and return to refrigeration for at least 1 hour. Unmold and serve.
